Apple Cranberry Crisp


This recipe is low in fat and has no cholesterol and includes a log of fruit and whole grains. It takes great warm or cold!

INGREDIENTS:
3 cups of cubed granny smith apples
2 cups of cranberries
1/2 cup of sugar
1/3 cup of whole wheat flour
1 cup of regular oats
1/2 cup of brown sugar
1/4 cup canola oil
 
DIRECTIONS:
Preheat oven to 350. Mix the first three ingredients in a medium size bowl then spoon into an 8 x 8 inch baked dish coated with cooking spray. Lightly spoon the flour into measuring cup and level with a knife. Mix flour, oats, sugar and oil with a fork until crumbly. Bake at 350 for 40 minutes or until bubbly.

Cranberry-Glazed Apple Dumplings

INGREDIENTS
1refridgerated pie crust (from 15 oz package)
4 medium baking apples (cortland or honey crisp work well) peeled and cored
2 TBS cream cheese
2 TBS sweetend dried cranberries
2 TBS sugar
1/4 tsp cinnamon
1 1/2 c. raspberry-cranberry juice
2/3 c. sugar
 
DIRECTIONS
 
1. Heat oven to 400 degrees farenheit, unfold piecrust; peel off top plastic sheet. Press out fold lines (this may have to wait for the crust to warm up a little bit to make it work better).  With Kitchen scissors or knife, cut crust into 8 wedges
 
2. Place 2 crust wedges together at points, overlapping points about 1/2 inch; press to seal. Center 1 apple on overlapped points. Spoon about 1/2 tablespoon each of the cream cheese and cranberries into apple. repeat with remaining wedges and apples.
 
3. In small bowl, combine 1 tbs sugar and cinnamon; sprinkle each apple with 1/4 tsp of cinnamon-sugar mixture. (reserve remaining mix.) Make 1 cut in each crust wedge from apple to edge to make 4 strips per apple. Seperate strips enough to speace evenly around apple. bring strips up and around apple, overlaping and sealing at top. Place wrapped apples in ungreased 8-inch square (2 quart) Baking dish.
 
4. In small saucepan, comnine juice drink and 2/3 cup sugar. Bring to a boil, stirring well to dissolve sugar. Pour ove wrapped apples in baking dish. sprinkle apples with remaining sugar mix.
 
5. Bake at 400 degrees farenheit for 35-45 minutes or until apples are amost tender and crust is deep golden brown.
 
6. Spoon sauce mix from baking dishover each apple; bake an additional 5-10 mins or until apples are fork -tender. cool at least 1hour before serving.
 
7. To serve, place dumplings in shallow sessert dishes; spoon sauce over dumplings.

Non Alcoholic Wassail

This is a traditional Pagan Yule drink. You know that line of "here we come a wassling?" lol well here's the recipe for it :-)

What You'll Need:

1 gallon apple cider

1/2 gallon orange juice

1 pint cranberry juice

4 cinnamon sticks

24 allspice berries (powdered allspice can be used instead)

36 cloves

1 large orange

1 cup brown sugar

Press cloves into the orange. Combine all ingrediants in a pot and boil it over high heat for 5-7 minutes. Reduce the heat and simmer for 45 minutes to 1 hour.
